Ligurian Pizza

Ingredients

Dough:

  • 500 grams flour (I prefer to use weight measurements for this because it is more exact)
  • 1 package rapid rise dried yeast.
  • 300 ml lukewarm water
  • 1 tbsp ground sea salt
  • 2 tbsp extra virgin olive oil

Toppings:

  • 4 tbsp Truffle Olive Oil
  • 16 oz brie sliced
  • 4 fresh figs thinly sliced
  • 16 slices prosciutto
  • 4 tbsp cornmeal

Instructions

  1. Dissolve the yeast in the warm water.
  2. Mix all the ingredients in a food processor using the dough hook and then let it knead for about 2 minutes.
  3. Place dough into a bowl, cover with a damp towel and let rise in a warm place until doubled. About one to one and half hours.
  4. Knead the dough to get rid of bubbles and then divide into 4 equal pieces.
  5. Roll into balls and cover with damp tea towel; let rise for 30 minutes.
  6. Pre heat oven and pizza stone to 475
  7. Flatten the balls, one at a time and roll out into a 10-12 inch circle
  8. Place one pizza dough circle on pizza paddle that has been sprinkled with 1 tbsp cornmeal.
  9. Layer 4 oz brie, one fresh sliced fig, 4 slices prosciutto and drizzle with 1 tbsp truffle oil.
  10. Slide onto heated pizza stone and bake for 13-15 minutes.
